    Spent some time at a new lodge in Deer valley, Utah, The St. Regis Deercrest. Food and bev is provided under the epic Jean Georges banner. Included in their cocktail selection were home made sodas that one could add the additional shot of their choice. Included in the list was a wonderful ginger ale with lemongrass which I have found a recipe. I would really like to make the others that I tried. Calamasie( no clue of the spelling) which was some sort of Asian citrus fruit and a passionfruit chile concoction. Both were squeezed out of a bottle over ice then topped with club soda. I assume the concentrate includes juice simple syrup and spices but i would like to find out the proportions. Any help would be appreciated.

    Calamansi is Filipino lime. I'm thinking you could make a terrific soda by mixing Village Creamery calamansi sorbet with sparkling water.

    House-made sodas are a restaurant trend I really hope becomes big.
