    Yesterday we celebrated my nephew's 30th birthday, so I was asked to cook some ribs. He didn't earn the nickname "10 Taco Mike" for nothing, so I wanted to be sure we had plenty of food. Faced with only having a single 18.5" WSM in my BBQ arsenal, I was forced to improvise. I pressed two roasting racks into service and the results are below.

    As it turned out, I probably could have fit another couple of slabs in the racks if I needed to and maybe even another one under the top rack. In a perfect world, I might have cooked a few of the slabs a bit longer (some were meatier than others), but 10 Taco Mike and the rest of the family were waiting and all of the ribs were devoured anyway. This was a record for me in terms of the most ribs I have ever cooked at one time in a single WSM. I think even that notorious meat crammer G Wiv would have a hard time beating this.

    did you have to rotate the ribs any
    what did you use for rub ?

    I took the lazy way out and used some of Gary's rub this time. I flipped them top to bottom one time around 1.5 hours into the cook.

    NICE...looks GREAT!
    What was the total time they took? Did you have to add much charcoal or wood during this smoke?
