I gotta ask:

Can someone walk in off the street and ask for "Clams Evil Ronnie Style" or "Short Ribs with XO Sauce Steve Z Style"?

Thanks! Maybe I'll celebrate with toast. Glad you enjoyed the shrimp and there were no egg squirting incidents!

The time honored tip off you are from LTHforum is to inquire if Gary's chili oil is in the refrigerator. Even if it is not present, they will know you are one of those internet people.

1. I believe the short ribs with xo sauce was once a special announced on a piece of paper tacked on a wall. If Steve is tweaking the order to his specificaition, he will likely advise.

2. I offer two posts, one the original from Evil Ronnie himself from June 12, 2004, when LTHforum was just weeks old and a post from Gary on December 29, 2006, where he indicates it is known to the staff. I think it is a good idea to know what the dish is just in case someone may not know, which Gary notes at the very end:

Subject: Little Three Happiness

Be sure to ask for those clams extra spicy, and on "extra crispy" rice noodles (they're often a little flat tasting).

...and try the fried oysters with a little side dish of the spiced salt and pepper mix.

Saint Pizza,

'Little' Three Happiness does not, to the best of my knowledge have a "secret menu", as far as shrimp toast not being on the menu, I order them pretty much every time I go and simply as for them by name, though I'm surprised to hear they are not on the menu, they were last time I actually looked at the menu which, admittedly, was sometime ago.

Far as Clams Evil Ronnie Style (clams w/black bean sauce and extra jalapenos served on a bed of crispy thin noodle), that is not on the menu, though they are happy to make it, I'd ask by ingredients as opposed to Evil Ronnie Style.*

Clams Evil Ronnie style is not a "secret menu" item, it's more on the order of a long time favored customer at a restaurant ordering dishes fine tuned to their specifications. For example, an apple jelly, white bread and Paulina Market ham sandwich being called The Hammond.

Next time definitely try the S & P shrimp, it's really terrific and if Jim The Beer Guy really wants to order something beef try beef short ribs with XO sauce or pan fried rice noodle, crisp, with beef.

Glad you liked LTH overall.

Enjoy,
Gary

*Most of the waitress would know Clams Evil Ronnie, but to keep it simple I'd order by ingredients then mention Evil Ronnie Style.

The trick here is to ask for them "dry style almost like salt & pepper"; otherwise they come oversauced and mushy. I don't think I have near the notorioty of Evil Ronnie, so asking for Stevez style, probably wont get you far (though hopefully it will catch on someday).
