    I've made a couple other 7-layer dips (traditional Mex, Indian in the style of Bhel Puri), so I thought I'd try another one for an Oscar party (no film relevance):

    1 1lb tub Mascarpone, spread on the bottom of a 9x13 glass pan
    Sprinkle with freshly ground pepper
    1 jar kalamata tapenade, spread over that
    1 can of small fava beans, well rinsed, distributed over olives
    Add about 2 Tbs (cheap) balsamic vinegar
    1 12oz jar roasted red peppers, drained, chopped to 1/4"
    3 cups chopped curly endive
    1/2 red onion, chopped to 1/4"
    1 12oz jar marinated artichoke hearts, coarsely chopped
    sprinkle with about 2-3 Tbs extra virgin olive oil

    Chill and serve

    You know, I do 7-layer dips for Sparky's lunch sometimes - never occurred to me to branch out a bit. Easy enough to do a Mideast one, too, starting with hummos, maybe jerusalem salad, tahini, pickled onions? I'm sure the other 3 layers will eventually come to me...and you'd use pita chips, of course.
