    jimswside - I'd love for this to be my first LTH event (and one hosted by a fellow Deadhead makes it all the better). Can you add me, my wife and my two young boys to the waitlist? We'll chip in for the pig and my wife is already conjuring up dishes she'd like to make.

    Thanks, buddy!! While I'll gladly pay for my sons' portion of the pig, don't count on them eating more than 4 ounces combined. Seriously, they'll load up on the appetizers.

    Besides the hog I am planning on doing ABT's a few slabs of ribs, and some Peoria Packing hot links if have room on the kettle and WSM.

    The ABTs you cook up make me salivate. Your last batch with crab and crawfish looked especially tasty!!!

    thanks I appreciate that. i think the batch i will do in June will be kilbasa, and cheese filling(quick and easy).

    BTW Jim,
    I have 1 very sturdy table i can bring, and 2 kinda flimsy folding tables if you get hard up.
    Still not sure on what I'll cook...
    spicy shrimp app maybe....
    (it cooks in the oven however)

    the sturdy table sounds good if its not a problem please bring it,., Im going to try to buy another 6 ft. banquet style table pre even, but the more space the better.

    the oven is all yours if you need it for the shrimp appetizer.

    it's been kind of a long runnign thread, started really early during the dog days of winter for my own mental wellbeing(needed something to look forward to when it was freezing out).

    Oh no! After looking forward to this since December and thinking about what to bring, I can't come! That day is my only nephew's graduation party! Jim, you now have 3 openings.

    I have some extra chairs, but like last year if you have a chair to bring for yourself, etc. that helps.

    What about bread products? Do we want squishy white bread or some buns?

    I've been noticing, btw, that I tend to look at a list for a pot luck and try to fill in perceived holes; this frequently results in my bringing a vegetable-based dish that gets mostly ignored. Should I just give up, or look for vegetable dishes that contain bacon?

    beer, chairs and napkins are appreciated.

    Also great call on some bread or buns for the pork.

    About 30 days out I think we will get up a spread sheet(with some help) of who is bringing what. That will help with what is needed or desired side dish wise. Maybe that will help with your decision, I think with this group any dish will be appreciated. :D

    after trying a pig off the La Caja Chinese Box yesterday, i am really glad the la Caja is the route I decided to go with as a cooker vs other options.

    Cant wait to try my hand with the La Caja in June

    Yea! I loved your gelato last year, especially the avocado and salted carmel. They were as good as any I've had in Italy.

    Im just hoping the weather stays dry, My lawn has recovered from last year.

    If things go as they are I plan on doing the event on the back section of the property between the wooded areas, not on the side yard as last year. More room, flat ground, and closer to my buddies fire pit where I can dump the ash from the La Caja Chine when needed.
