    Date: April 11, 2010

    Time: 11:30 am

    Location:
    Mundial Cocina Mestiza
    1640 W 18th St
    Chicago, IL 60608
    (312) 491-9908

We'll cap brunch at 10 (preference given to exchange participants)

    Brunch:
    IndianBadger
    pairs4life

    Exchange
    IndianBadger
    pairs4life

Number in the group: We will cap attendance at each gathering at 10 so that participants are never making more than 10 servings of anything. Couples will be counted as one serving.

The food: There are great omnivore dinner and dessert exchanges that happen monthly. This is for people interested in doing a vegetarian dinner exchange (without meat, meat stock etc, but can include eggs and dairy). We make 5-10 servings of one dish, and bring back 5-10 different dishes. Participants bring one pre-portioned serving of their food for everyone who has RSVP’d to come that month. A serving is whatever you think it is for your food item. The priority will be for entrees, soups, salad, stews, pastas, grains, etc.

There's a preference for healthy dishes, one no-wheat eater, one veg Atkins. If your dish has wheat or carbs, it can be included, but just inform the group in your post.

The containers/delivery system: Everyone in the group should use the Gladware 3 1/8 cup plastic containers (it’s the approximately 7” x 7” square). You’ll portion your food into those containers to bring and hand out at the gathering. You can freeze them or not depending on your schedule and when you make your food. There is no need to fill the container, just put in whatever is a serving to you. If you use something else to deliver your food that month (Ziploc bags, plastic wrap, etc.) you should also return the empty containers from the last round so that everyone always has a stash of these containers for the exchange and doesn’t have to run out and buy more.

    The process:

Each of us will take turns being the organizer each month. Each time we meet, someone will offer to organize the next month’s gathering.

Approximately two weeks before the next gathering, the organizer will post a new thread to the events page announcing the date and the location for that month and asking for RSVP’s.

Participants will need to RSVP their attendance by one week before the monthly gathering. They will then need to post what they are bringing by three days before the gathering. This is to help make sure we get some balance in the food so that we’re not all bringing something that has to be eaten in the next 2-3 days; that there’s a balance of stuff that can be frozen for later, or eaten sooner.

The organizer will monitor the thread to see what people are bringing. The organizer will also make reservations for the group at the restaurant where we will be gathering. People can choose to stay for the meal or just come and exchange food and leave. Just let the organizer know so they can get an accurate count for the reservation. Other LTHers are welcome to join us for the meal, even if they are not bringing food to exchange.

I'm sorry too--I have a standing commitment between 11 and 2 on Sundays. I mentioned it in my note on the March post. I can't make this one, but would love to come if it's held Sunday evenings, a weeknight evening (preferably Monday or Tuesday), or Saturday during the day.

    I'm really confused.

I must have misunderstood the email because I thought ecs & veghound were both interested and available which is why I put this thread back up. :?

Indianbadger it looks like it's just the 2 of us so why don't you PM me again & confirm if we will meet this Sunday.

Mea culpa. I couldn't remember the exact date to tell ecs and veghound. I'd be interested in switching the days around too, so that some months we met on a Monday or Tuesday.
"To get long" meant to make do, to make well of whatever we had; it was about having a long view, which was endurance, and a long heart, which was hope.

i think i accidentally fueled the confusion with my inquiry concerning if/when was the april exchange...oops!

i would be happy to organize the next event on a weekday. is the end of april (evening of the 26th or 27th) too soon? PM me if you are interested in one of those dates and i will get something organized.

i am so sorry i am missing sunday...i have been really wanting to try mundial and of course eat everyone's wonderful creations!

I'm sorry that I contributed to the confusion too! I was out of town for one or two of the planned weekends and then the rest were brunch on Sunday. After the first time or two, I sort of gave up on saying that I had that conflict when the notices went up and I didn't realize that the April get together was planned during that time too.

ecs--thanks for suggesting another date in April. I can definitely meet on April 26th or 27th if others are interested. Pairs4life--if daytime is better for you, I'm free Saturday brunch/lunch. Would that work for others? If this gets going again, would people like me to circulate some dates for Saturday brunch for May or June? I'd be happy to organize the next one.

Veghound please organize the next one for May and go ahead and post the dates.

ECS- Why not PM all former participants and see if they can do April 26th or 27th. If you get at least 3 I say go for it. Then Veghound can plan one for May and let's see how it goes.

I've really enjoyed it, as has my husband.

This okra( I think) & rice w/ spice dish was fantastic. I've always been a bit afraid of okra b/c I think of it is covered in spitballs, so you must tell me, how did you get rid of all of the seeds so that there were no apparent spitballs?

You make me want to try my hand at preparing okra in southern ways.

    Thanks Indianbadger!

I am glad you liked it!! I have used this dish to introduce Okra to a lot of people who said they did not like it. Looks like this dish has made another convert. :D

The three things that make this dish are: use the frozen cut BABY okra, cook the onion paste on low heat for a long time to develop flavor and then cook the okra in this gravy on low heat for a long time.

If you are interested I will post the recipe. :-)
