    I was thinking of making pates de fruit for a bake sale, but since it's outdoors, should I worry about them melting in the sun?

    Generally, jellies hate any heat. Agar agar can stay stable at very high temps (well over 150 degrees). You may want to experiment a bit:

    @Pielady- I don't know if you are going to purchase it, or even how to use it, but I would be willing to go in if you decide to buy the bulk version. I've wanted to try to re-create my aunt's lemon chiffon pie, but it's got gelatin in it.
