yesterday i bought some rhubarb. i chopped the 4 stalks and cooked them in a little water with about 1/3cup of sugar. i cooked it until it was syrupy; cooled it off completely and processed it to a smooth puree. then i folded it into 2 beaten egg whites and about 1 cup of whipped cream. this is called a semi-freddo ('half frozen'). into the freezer it went, in a shallow pan, covered up, for several hours. delicious....a semi-freddo is one of my favorite desserts. this was the first time i tried to make one with rhubarb, and the flavor shone through beautifully.
a semi-freddo is easy and don't really require a recipe. just a great flavor (in this case sweetened rhubarb), beaten egg whites, and some whipped cream. it's lighter in taste (and calories) than ice cream and takes very little time (and no machine) to make. spring is here when the rhubarb shows up in the market! justjoan
