    I have a client who is lactose sensitive and is requesting a dairy free (no cream) fresh strawberry tartlet. Any ideas on how to make the strawberries interesting without using dairy?

    Would they like a chocolate tart with strawberries? (not exactly subtle, I know) Ordinarily, one would do this as a ganache, but milk substitutes aren't that noticeable in chocolate if you taste-test carefully (esp. almond milk, as Kenny pointed out)

    Or you could use a lemon curd instead of a pastry cream, just sub a dairy-free option for butter (most vegan recipes use coconut oil.)

    What about putting a strawberry jam on the crust and then putting whole or cut berries. Dot with meringue and brown just the top like a lemon meringue pie.
