    I love to use my simple Brinkman water smokers ( I actually have two) for lots of things, but especially pulled pork, country style ribs, spareribs, and salmon (thus the second smoker).

    BUT, I've never found a great way to get rid of the fatty liquid left in the drip pan.

    Anyone got a solution they like?

    I take the pan to the alley and raise it sharply upward, then jerk it to a stop, producing a 15-foot arc of greasy water which splatters across the alley and quickly makes it impossible to tell anything has been discarded there. Okay, maybe it's a little shiny back there for a couple of days, and smells vaguely like pork.

    I'm afraid I haven't ever come up with anything more clever than taking it to the kitchen -- which involves very carefully carrying it through the living room (I live in an apartment and the smoker is on the balcony) -- and pouring it down the sink. That said, I'll usually let it cool down, sometimes over night, if it's really full, and then use a pitcher to get some of the water out before carrying it through the living room.

    HI,

    I remember a poster commenting he dumped his greasy water and cold ashes into a 5-gallon utility bucket. When it was full, he took it to the curb.

    I often leave the waterpan until the next day. If I am lucky, the water has boiled away leaving grease covered foil liner. This I can wrap up and toss in the garbage.

    If I dump the ashes in the yard. I try to scatter them greatly because they are not ideal for our local soil. If we had a low pH soil like in the northeast, the ashes would be welcome.

    I toss the contents of the water pan(as well as left over extinguished ash) into the woods on my property(the deer, wild turkey, and fox seem to like it). Another benifit of not living in the city. :D

    Over the fence and into the neighbors' yard has always worked well for me. :D

    In all seriousness, I generally spill the bowl in a part of my property where there's only mud and flagstones. Over the 8 years I've lived there, there's been no ill effect that I can tell. Nothing ever grew there in the first place and there's been no build-up of gunk/grease, weird smells or animal activity. I do try to make sure that the bowl is pretty full of water before dumping, just so whatever else is in there is more diluted.

    I just love the fact that right now the top two threads in Shopping & Cooking are for water smokers and marijuana. Thought I tumbled into the High Times forums for a minute.

    I usually leave everything overnight and then dump the ashes and drippings into a 5 gallon bucket with a garbage bag lining it. Once it's full I just tie up the bag and dump it in the trash.

    One of the reasons I love smoking in winter is that I can just let everything freeze and just bang out the ice/grease block into the trash.

    Exactly what I do, long as to the curb means leaving the full container out for garbage pickup. One note of caution, make sure the ash and any remaining coals are fully extinguished.
