    It may sound stupid, but I'm trying to locate a local (Chicago) source for a good non-commercial (meaning no Butternut, or even Manitowoc Ovens types) sliced white bread that would be made of unbleached flour, with no molasses or refined sugar, no hydrogenated oil, and that would not have a rubbery, mushy, or carton like texture.
    Very disappointed by those I tried from Trader Joe's or Whole Foods.
    Any suggestion, if possible in the Northern Part of the City?

    What about the Polish bakeries? Most of them do a white bread that's more substantial than Wonder, but not a totally French crusty type. You could check out a wide variety of them at a store like A&G, Central and Belmont, or Lincolnwood Produce, Lincoln & Touhy.

    some Balkan ones too, including Beograd, which has fresh-baked simple white sandwich bread every day.

    Good handmade loaves at Heavenly Hearth Bread Company in Wilmette.
    Small baker, quality. I have posted before on them. Also, Alain, have you had the miche at Bennisons? I know it's not what you asked for, exactly, but I like it quite a bit. Only Fridays, I think. Funny, but whenever I am at Bennison's I always hear patrons speaking French.

    I will certainly go and check Beograd out on Irving Park.
    Josephine, I have known the two very good bakeries that you mentioned in Wilmette and Evanston for years. I like their very good baguettes and Bennison makes quite decent croissants that they sell at the Evanston Farmer's during the summer. But as far as the just plain white bread I'm looking for... I'm not sure they would be the right place with the right price for this kind of item.
    I noticed Yesterday that Fresh Farms International on Touhy in Niles sells a sliced white bread made only from flour, water, salt and yeast, the way it should be. It comes from a small Balkanic bakery called European Classic located on Elston Avenue near Peterson.
    I will check it out too.

    You might want to check out the bread at Morse Market, 1430 W. Morse, by the deli/meat counter. I've picked up some different loaves there that might fit the bill for you.

    One more addition.

    I was at Lincolnwood Produce today and in their bread aisle thought of you Alain.

    Levinson Bakery "egg bread", a plain jane loaf of white bread with exactly the ingredients you mentioned. Nothing more nothing less. Odder still is that the bakery is actually in West Rogers Park. Not sure if you've been there.......
