Would an all-nite-diner work? (Diner Grill?) How about something ethnic? (San Soo Gap San is open late, as are some places on Devon, i think.)
Are you geographically restricted to the greater central lakeview area? There's a funky 24 hour place called the Pick-me-up cafe in the triangle bounded by Roscoe, Sheffield and Clark - it's serviceable, as i recall, and does serve beers (tho perhaps not that late). The Melrose at Broadway and Melrose would also be open.
In any event, as the nite winds on, the options tend to become more limited - you may need to be creative.

Guinness needs a proper ratio of CO2 to Nitrogen in its lines when it's being dispensed from the keg. In order to pour a good Guinness it's actually kind of a hassle. The lines need to be thoroughly cleaned much more oftene than a standard beer line and most bar owners could give a shit about making sure that the pressure and ratios of the gas in the system are correct (since 99.9% of beers just require simply CO2). Storing vs serving temps vary and it needs to be a fresh product.
Guinness has actually started to implement trained daft techs in their large American markets to go around and ensure that it's being done correctly....because most of the time it's not. At O'Hagans, they're doing it right. Go in there and get one you'll notice a difference in quality even as a novice beer drinker.
