I will personally prepare each Tijuana bacon dog, using an 8/1 natural casing, wrapped in bacon and flat grilled, garnished with grilled onions, mustard, mayo, and jalapeno peppers. Ketchup will be available for those requiring complete authenticity for their encased delight.

For those who can't take the heat, I can prepare a Chicago Francheezie, a flat grilled hot dog, wrapped in bacon, and dressed with Merkt's cheddar cheese. Grilled onions too! Yum!

    Hi,

My Dad was meeting childhood friends for lunch today. I told him what was being offered at Vienna factory. He sounded a bit sad he was likely stuck going to Edelweiss, though he was going to suggest the Factory anyway.

    Regards,
    Cathy2

Thanks to those who experienced the Tijuana Bacon Dog for lunch on Wednesday. I had the opportunity to meet, greet, and eat with mbh, Rene G, Pigmon, and Jim the Beer Guy. The next special will be a 2010 version of a Chicago francheezie: a bacon wrapped hot dog, deep fried and dressed with Merkt's cheddar cheese. Grilled onions will also be available. Time and date TBD.

It was nice to meet chicagostyledog and to try a different take on the Mexican street dog. By the time we got there Mark was no longer behind the counter and, because of demand, the bacon-wrapped dogs were being deep fried, with the onions and peppers getting cooked separately instead of getting stewed in the bacon grease. Not surprisingly this results in quite a different taste than an authentic street dog. The staff seemed overwhelmed so our dogs came dressed only with large gobs of mayonnaise plus the onions and peppers (the ketchup was added at the pumps later).

Compared to what I've eaten on the streets, the quality of the sausage and bacon was unquestionably higher but unfortunately the taste just wasn't there. I'm looking forward to the char-grilled salami, coming soon, to see how it will compare to Poochie's and other standard bearers.
