In August, 2009, ABC7 wrote:As for the "Que" part of the operation, there is no slow-smoking here -- which will rankle purists. Instead, they break down the connective tissue in their ribs and brisket a very different way.

"We are doing pressure cooking, which is still hickory and mesquite chips but we speed it along by virtue of pressure," said Wise.

Once the brisket is sliced, it's cooked on the grill a few minutes more; same with the ribs, which get a final crisping-up on the grill along with some sweet sauce.

I was driving north on Wolf Road this afternoon and passed this stand and noticed a large Vienna Beef banner in their front window. A block past, after reflection that I had not had a good hot dog in more than several weeks, and an impromptu U-turn, I was at the counter contemplating my choices.

Hot dog choices are limited to a Classic Chicago Dog ($2.95) or a ¼ Char Dog ($3.35). I opted for the Char Dog and added Cheddar Cheese for an additional $.50 with everything. I was pleasantly surprised to see an order of fresh cut fries hit the fryer as my dog met the grill.

The fries weren’t able to survive the trip home. Fried to nice dark hue, these are some of the best fries I’ve had in some time. Nice fluffy interiors and deftly seasoned. The dog was nicely charred and offered the requisite toppings—commercial grade yellow mustard, onions, neon relish, celery salted tomato’s, pickle spear and sport peppers. The dog offered a nice snap and the Cheddar (Merkts’?) offered a nice compliment to the dog. When I order this again, I’ll forego the pickle spear which left the top ¼ of the bun side it was nestled against somewhat soggy.

While not a destination spot, it fit the bill for what I needed. The staff was engaging and friendly and I will definitely stop in again.
