I, for good or ill, have found burritos, nachos, and fajitas in Mexico, including way-the-f inland regions with no relation to the border. I understand your point, while acknowledging the feedback cycle between what's expected by some visitors and what is presented on menus. With some irony, the items you mention have developed into their own kind of accepted mid-century subcuisine, the same way you might find Chicken Luau in Fargo.
