    One pound of fresh Burgundy truffles on my cutting board yesterday afternoon. (Poached in port wine)

    Just curious - what does the poaching in port do to the truffle? Does it improve the flavor vs. truffle "au naturel"?

    Poaching in port wine is the old school method of preserving truffles, and that liquid is fantastic for sauces.

    I'm sure snapping turtle is delicious, and that these folks traffic in only the finest snapping turtle, I just find the idea of a bucket of meat highly amusing.
