I have made pulled pork in the oven using a large 6-7 lb butt.
I just smeared it with mustard and rub like I would for the smoker,
put it in a foil-lined pan, then topped it with a few drops of liquid smoke (since there wouldn't be any real smoke around),
covered it with more foil crimped tight,
and cooked it at about 250 untill it was soft
(which for me was putting it in when I left for work in the AM, and taking it out when I came home).
I can't remember, I might have had someone at home put it in at 10 AM.
It turned out really nice.
Not as good as in a smoker, but it was the middle of winter, and I didn't have to deal with 6 inches of snow....
A 1 lb piece would probably cook at that temp in maybe 3 ish hours....?
of course a larger piece could always get divied up and put in the freezer for a later meal...
