I've been wheat-free (mostly) since August when I discovered I have an allergic reaction to wheat. Not celiac... I can still stand other glutens, but wheat is not my friend.
I didn't do much in the way of baking for the Thanksgiving holiday, but I am itching to try some gluten-free baking for Christmas.
Now... Whole Foods has been a good place to find most of what I need (and what I can't find cheaper at NW suburban places like Eurofresh, Caputo's or Valli). The illusive thing for me currently is guar gum. If they have it at the Palatine Whole Foods, it was hiding the five times I have tried to find it. I was able to find the Xanthan gum (I think even the Palatine Target now carries it) but I was also looking for guar gum.
I will say I have been impressed at the ability to find a lot of gluten-free items, mixes and flours at pretty much every place I shop. It's not nearly as hard as I thought it was (and I think I have finally passed the point where I'd sell my husband for the ability to eat a crusty wheat-flour baguette).
