    The subject line says it all. I am roasting a prime rib with a horseradish, rosemary, garlic crust. I had originally thought cabernet sauvignon but maybe I need a bit more fruit in the wine to counter the zest of the horseradish? Pinot noir? Burgundy? All suggestions welcomed. Thanks.

    Hi,

    I'd go for something full bodied like a malbec or malbec/bonarda blend. Go to a great wine store and you will come up with ideas.

    I'd go or an old vine Zin. But I'm a Zinaphile.

    I'd do Syrah/Shiraz. Maybe Zin.

    Thanks for the replies. I think a syrah might be terrific. I am also partial to Zinfandel but the high alcohol bigness of a traditional Zin might compete with the horseradish instead of complementing it. On the subject of Zinfandels, there is a guy in Napa Valley, George Hendry of Hendry Vineyards makind diverse and terrific Zinfandels.
