    HI,

    During a tour of the new kitchen at Kendall, they showed their Enviro-Pak smoker which they still needed to study to learn. This is just the control panel:

    Did you notice the on/off switch for the liquid smoke? I knew some people would not believe me without a picture to prove it.

    I told them they were missing some important elements in their smoker: the pit, the pit master and the wood.

    It is common after smoking sausages, bologna, etc. to immediately shower them in cold water to prevent shriveling. Unfortunately, a great deal of the products in the deli dept. are cooked in these contraptions.
