I'd love to go. Some of my favorite Filiipino dishes include:
* Crispy pata - skin of pork leg. Simply to die for!
* Dinuguan - intestines in blood sauce. I love intestines but there is something about the blood sauce that makes them supple and minimizes their toughness.
* Mechado - not quite as exotic, but beef cooked in, according to what I'm told. pork fat-back, in what is a beef stew. According to Wikipedia, apparently the trend is to make it less fatty (too bad! Fat = Flavor)
* Spinach in coconut milk - I don't know the name of it but it was fantastic.
While we're on the topic, it's worth pointing out that Filipinos are thin, despite the perception of a "fatty" diet.
