I picked up some beautiful pork belly at Paulina yesterday (frozen but nicely portioned in 1.5 lb packages with an almost perfect meat/fat ratio) and would love to make some pork buns with it. Anyone know which grocery store or bakery in Chinatown carries the buns for these?

if you're near argyle/broadway, go to tai nam on broadway and you might want to use the frozen gua bao (white bun which opens like a book to hold the filling; sun wah uses this style of bun). justjoan

Quite a few weeks ago I also picked up pork belly from Paulina and used it to make a version of Pad Prik Khing Moo Krob.
Just recently I got another piece (approx. same size but with no skin & a bit fattier/significantly less expensive) from the Chicago Food Corporation on Kimball. I've been hemming and hawing about what to do with it. Buns sounds like a fine idea, but I need to be pointed to a good recipe.
