    HI,

    I am probably not the only one wondering what Spaghetti Caruso may be. At a site called Great Chicago Italian Recipes, there is a recipe for Spaghetti alla Caruso.

    Spaghetti alla Caruso was named after the famed Italian tenor Enrico Caruso who reigned over the Metropolitan Opera house for eighteen years. Caruso, who frequently cooked, loved chicken livers and incorporated them into this dish with San Marzano tomatoes, mushrooms, onions and garlic.

    I noted they recommended buying lighter colored chicken livers rather than red. They noted they are fatter, sweeter and less bitter than red livers. I have seen the occasional light colored chicken live. I always thought there might be something wrong. I didn't throw them away, though I certainly did not seek them out.
