    I came across a delicious-sounding recipe for a Chinese chicken salad with black vinegar dressing. I've never cooked with black vinegar before. Does anyone have any particular brands to recommend? (And source info.) I went to the Vietnamese grocery on Broadway north of Lawrence & read some labels but couldn't really discern good from bad (though a lot had ingredients that made me suspicious - vinegar, sugar, caramel color - they might be lower quality varieties).

    I can't say I have a favorite brand, but definitely get some.
    It's essential for many chinese dishes, especially sichuan. Rice vinegar won't cut it; balsamic is probably closer.
