    Interesting development at Costco. Right next to these "Chuck short ribs" were similar-appearing but obviously different pkgs marked, simply, "flap." I'll have to try it next time.

    But this time we had a steak-off between my short ribs, and Costco's tri-tip, which my buddy Rusty thought he preferred. After cooking both, and tasting both together, he swapped out his preference! :)

    So, in adjacent bins at Costco on Sunday were to be found chuck short ribs, flap, tri-tip, skirt (didn't check outer vs. inner) and flank. Nice group of choices!

    More on flap steak: What to do with flap steak?

    the skirt steak i've seen at costco has all been inside skirt steak.

    I've seen it at the Costco on Clybourn within the last six months.

    I have not seen tri-tip at the Lake Zurich, IL location for some time now and we miss it. Has anyone seen tri-tip in the NW suburbs recently?

    If you're looking for flap steak, Chicago Meat always has it in stock in big quantities and reasonable prices.
