Here's my challenge: I'm going up to our summer place next week with the extended family (there'll be 13 of us) and I'll be expected to make dinner at least one night. I've already ordered and received a Kentucky country ham (from
Scott Hams - an 18 pounder). I'll do the usual soak/boil/bake on the ham - maybe with a glaze, but the issue is the sauce to go with it. I'm thinking of a basic mousseline moutarde with cracked pink peppercorns for a little color, as well as the flavor contributions (my sister-in-law is a huge fan of pink peppercorns). But I'm not wedded to this idea. Does anyone else have a suggestion for another appropriate, maybe more creative accompaniment to the ham that would involve/feature pink peppercorns?
