    I’m considering buying some fresh fall truffles but they only come by the pound. So I can either eat a boatload of truffle before it goes bad or think of a way to store it. So, questions…

    How long will a fresh truffle last before it turns bad?
    Can they be frozen with any success?
    Are there other options for storing them?
    If all else fails how do you suggest I eat a pound of truffles? :wink:

    Or option 3) Buy them from a place that sells them in smaller portions.

    Are you certain that the minimum order from the vendor is one pound? I think they're often *priced* by the pound, but I imagine that only wholesalers sell them in one-pound increments.

    I should have thought of this a few weeks ago - I could have just showed up at the picnic with a 1/2 lb. of truffles and a shaver and set it out to use as seen fit.

    Best Long Term Truffle Storage: Freezing

    Though the results will not be as good as commercially preserved truffles, you can freeze truffles at home for long term storage.

    Freeze the Truffles Plain: Freezing truffles is the most reliable way for a home chef to preserve them for up to six months. Vacuum packing before freezing is best, but if you don’t have a machine, place your truffles in a zip top bag with all the air pushed out or sucked out. Freezing the truffles separately will make it easier for you to use them one at a time later. Once frozen solid they can be consolidated into a single bag (with as little air as possible).

    Once frozen, truffles are best cooked or grated from frozen rather than thawing first. If finely grated, the warmth of your food should thaw them.

    Freeze the Truffles with Butter: You can also pre-grate the truffles and mix them with butter to make truffle butter, then freeze the butter.
