As far as I know , There is only one really good restaurant downtown Castres:
Bistrot Saveurs Rue Sainte Foy Castres
It is relatively recent and got very good reviews. I believe that the chef is a Brit.
There was also a good wine bar with good regional cuisine : La Passion du Vin , Place Pelisson Castres, but I do not know if it is still in operation
    Good luck.

    Then I would suggest;
l'Amélie Mélo 2 Rue Saint Martin. A small simple bistro with a funny decor focusing on movies, with a creative cuisine.
Mandragore, 1 rue malpas Comfortable. Good food and service.
Le Pescadou 26 Rue des 3 Rois. Focusing on Mediterranean seafood.

    Good luck.

P.s Castres is not a gastronomical paradise and the city itself is not that exciting, unless you love rugby. . If you want to try good regional food drive to the marvelous city of ALBI (33 miles away) that has many good restaurants.

. . . and 30 or so miles in the other direction from Albi is Castelnaudry, the capital of cassoulet. My recommendation would be several years old, but you can seek out some good ones once you get there (It's kind of a specialty of the whole region, so I'm sure a lot of locals will have their favorites, and you'll get plenty of chances to sample variations.) You're also pretty close to Toulouse which is a great food city with several food streets (one of them has a couple of emporia of fromages, another charcuterie, and so forth). Last time we were there we wound up at one of the standout brasseries of the Flo empire, and since these are usually pretty consistent over the years, I have no qualms about recommending it:

"The fork with two prongs is in use in northern Europe. In England, they’re armed with a steel trident, a fork with three prongs. In France we have a fork with four prongs; it’s the height of civilization." Eugene Briffault (1846)

Castelnaudary is a bit farther away South than Albi (North), and Toulouse even farther ( 52 miles away from Castres).
Castelnaudary is the real birth place of the Cassoulet. Best and safest address: Le Tirou 90 avenue Mgr De Langle.
Of course the big and beautiful city of Toulouse offers a wider selection of good eateries. For Cassoulet Toulousain try Emile 13 Place Saint Georges,
    Bon appétit.

Yes Gocubs88, I was born, educated, and lived in France for many many years before moving to Chicago.
But I still go there often.
I also write on French food, wines, restaurants, and films on my web site, but I have temporarily suspended that part of my activity because I am busy working on another writing project. I will go back to it this month.

Alain is spot on re: Toulouse. it's very pretty and lots of fun. I've eaten at Cave du cassoulet a couple of times, enjoyed it completely. There's a cream of chestnut + corn dish that we just loved.
