    Does anyone know the proper ratio for coconut cream to sticky rice? I googled recipes and it varies from 1 can (rough 2 cups) coconut milk to 1 cup of rice to 1 cup of coconut milk to 3 cups of rice. I'm assuming these are based on rice measurements prior to steaming. Thanks.

    This recipe is TNT. Hope it helps.

    2/3 cup coconut milk
    2 tablespoons granulated sugar
    1/2 teaspoon salt
    1 1/2 cups cooked sweet rice, warm
    2 large mangos, ripe
    3 tablespoons coconut cream
    black sesame seeds, optional

    In a bowl, combine coconut milk, sugar, and salt.
    Stir until sugar is dissolved.
    Mix in warm rice and set aside for 30 minutes.
    Peel mangos and cut into medium sized cubes.

    Mound rice in center of serving dish. Arrange mangos around edge.
    Pour coocnut cream over rice and sprinkle with sesame seed, if desired.

    FYI,

    It was an LTH aided, pan-asian themed dinner tonight

    1. Eatchicago's potstickers
    2. Fuschia Dunlop's dan dan noodles, dried fried green beans, and kung pao
    3. Sundevilpig's char siu
    4. Bill/SFM's sticky rice with mango

    All were delicious. Of note, the sticky rice recipe posted above also calls for less sugar than the versions I saw when I googled it and I thought the amount was perfect. Thanks to all for the recipes; all of the guests raved about each dish.
