    Hi all,

    Could someone tell me what's wrong with my balsamic vinegar? I went to make some salad dressing the other day and discovered something unexpected in the bottle. A scummy-looking skin had formed on top of the liquid. Does anyone know what happened? Can I remove the skin and safely keep using the vinegar? I'd rather not experiment, as you might understand. I just bought this stuff! It's a big bottle, it's more than half full and it cost more than I'm willing to toss, too. Guess this is a hint from above that I should be eating more salad......

    It's called "mother-of-vinegar", and it's a useful thing to have around. Put the glob in a closeable container, and empty your unfinished wine bottles (if there be such a thing : ) into the container. It'll make new fresh vinegar.

    No kidding? I threw out a bottle of vinegar once because of this. To think I coulda used it to make more vinegar. Fascinating.
