We really enjoyed having a (first) breakfast of Khao Tom during a recent trip to Thailand. We've been continuing that custom (well, now it's our only breakfast) since we got home.
Khao tom is a very simple broth with rice, and generally, meat. At some places, we found it was very thick and congee-like, at others, more of a light soup (I prefer the latter).
At home, we've been spiking a pot of stock (generally pork or beef) with some combination of the following: lemongrass, garlic, ginger, chiles, dried shrimp, fish sauce, a little sweet soy, sugar, salt, shallots, pepper and adding ground pork, rice, fried shallots, sometimes bean sprouts and cilantro. We adjust the final product with the contents of our new condiment tray.
