    jlawrence, I have a theory why there are not yet any replies to your "More Offal" post here. Anyone who clicks through to the site you found gets completely taken up by that blog and uses up all their surfing time and never makes it back to LTH! We sat and read and read and laughed and marvelled. HOW INTERESTING! Thank you for finding it! Thank you for sharing it!

    PS. I sort of feel that way myself: my butcher here in Montréal cut me up 6 tibia last week for marrow bones. I got 15 lovely marrow bones from the central parts of the tibias; then, I took all the remainder and boiled it all day Thursday. Chilled, de-fatted, and wound up with over a gallon of 'soup', which I've reduced to about a pint of ... of... gelatin, for want of a better word, which I'm freezing in order to use as a main adjunct when I make phô! (Are bones "offal"? or just "bones"??)
    Sooo, you like wine and are looking for something good to read? Maybe *this* will do the trick! :)

Chances are you'll see blood, guts, knives and guns on this blog. There are also pretty big chances you'll see cute little animals before and after they're killed. If you don't like that kind of stuff, go buy your meat from Costco or something. Cause this FinnSkimo LOVES meat. Especially the kind that's all natural and taken care of by me. :)
