Italian Superior serves the jus. It's not the typical Italian Beef taste profile, though it looks the same. It's really roasted prime rib that is shaved thin.

I'm almost certain that at the recent 24-hour Chowathon, we were told that due to rising costs, the roast beef is no longer carved to order at Manny's.
