    Please, I need some recipe help.

    At breakfast out today I had some smoked whitefish that was so salty I couldn't eat it. I took it home, thinking I'd do something with it. So, can you help me not to waste this stuff?

    It definitely needs to be cut with something. I don't know if it wants to be a spread for bread, a sauce for pasta, a filling for a croquette, or something else. Whatever it is, it needs to not have any other salty ingredients :)

    Looks like you've hit upon a solution, but I'll toss this out there anyway. Up in Leland, Michigan is a great family owned place called Carlson's where they make a pretty fantastic whitefish pate. If I find myself needing to use up smoked whitefish, I often try to approximate it with your standard dip recipe - cream cheese, lemon, green onion, perhaps a bit of mayo if it's too thick. I like this spread quite a bit on a good piece of crusty toast.

    A quick smoked white fish pasta is in our regular rotation. Mix together Greek yogurt, juice of a lemon, horseradish, a little mayo, a little dijon, sauteed shallots, and then toss with flaked fish, pasta, fresh scallions, and blanched snap peas. Radishes or apple also nice mix-ins; all the freshness and pasta and yogurt can tame the salt in your fish.

    I think Bayless' first book had a smoked fish potato salad with chipotle peppers. I can't seem to find the recipe, though.

    Close but not quite: in the margin, as a variation (on page 129), he suggests a smoked chicken salad on the same page as an unsmoked chicken/potato salad. I don't believe there's a smoked fish recipe in that book.

    Please help!
    I bought some smoked whitefish just today and was smooshing it up for pasta salad and there was this green stuff inside that looked like cooked spinach. What is this stuff? Is it safe to eat?

    Why not mash it into some whipped or regular cream cheese. Add some fresh chopped chives or dill, maybe some onion. toast a bagel and spread it on.

    It looks like you are linking to an email. You've got to post the image on an actual server and then link to it.
