Actually I view it as making molecular gastronomy more accessible. The El Bulli -branded Texturas kits have long been available at fairly insane mark-ups ($2 worth of chemicals for about $75), so it's nice to see packaged kits at an affordable price (not everyone want to measure out fractions of a gram). While I appreciate the concept and greatly enjoy the Harvard School of Engineering and Applied Sciences podcasts, I was not all that enthused about doing this at home. However I have a 10-year-old nephew who's really into science and we've done a few cooking science projects (spherification, gels). It's a great way to make cooking and science more relatable.
