Last night on Top Chef Masters, a stuffed chicken wing dish from the Lotus of Siam restaurant in Las Vegas was mentioned. I understand the wing was stuffed with pork, various spices, and deep fried. Does anyone have any experience eating this dish here in Chicago. I found that P.S. Bangkok 2 on Halsted has a stuffed chicken wing dish. However, it is listed to be stuffed with bean thread noodles, cabbage, and black mushrooms stuffed into, which are batter dipped and deep fried.

The dish sound fantastic to me. Hoping to try it in a restaurant, but I might have to try cooking it myself.

The Siam Pasta restos have something similar:

    "Stuffed Chicken Wings
Marinated chicken wings stuffed with a blend of selected spices, ground pork, ground shrimp, bean thread and water chestnut battered then deep fried."

I'm pretty certain I noticed stuffed chicken wings on the menu at Rosded, but I've never tried them there so I know little about the stuffing.

Amarind on North and Oak Park Avenues has them too...

The Amarinds version is stuffed with chicken breast. That place is just so Thai Lite. I swear, last time I was there, the khaosoy was made with lite coconut milk.

I ordered this dish at Sticky Rice a few months ago and it was pretty forgettable.

I attend the Waukesha (Wi) farmers market every Saturday. It is a good one. There is one fellow who makes spring rolls and stuffed chicken wings. The wings are deboned very well, and stuffed with the same rice noodles, veggies, etc... that are in his spring rolls. They are golden brown and beautiful. They are not deep fried, but are pan seared. Look good, taste good.

Im sure this is an easy dish to fail cooking properly. The fact that chicken and pork do not cook at the same rate makes it seem like a disaster waiting to happen. I'm going to search YouTube to see if there are any videos of the preparation of this dish.

Thanks as always for everyone's assistance.

They also serve a version of this at Siam's House in Niles, called Angel Wings. Sometimes they're great and other times, they taste like they've been reheated. The description below (from AllMenus.com) describes them as boneless but I'm not sure that's entirely accurate. IIRC, there's at least one bone intact . . .

    Angel Wings $4.25
