"my favorite pasta recipe I use for my underground supper club"
200 g "00" or semolina flour
6 egg yolks
2 whole eggs
10 g whole milk
15 g extra virgin olive oil
mix all wet ingredients together in a bowl
pour dry flour on a clean work surface and make a well
add wet ingredients in the flour well and use a fork to incorporate the wet and the dry slowly
knead the dough for 15 minutes or until the dough is smooth and roll into two equal balls
wrap the dough with plastic wrap and refrigerate for at least one hour. (the dough can be made a day in advance if you like but it is better the day of)
proceed to roll the dough into which ever pasta you like. I like to make tagliatelle as pictured below. enjoy!
