Subject: How to Separate Egg Yolks & Whites

This is a Chinese video showing how to separate the yolk and the whites from an egg. The video is in Chinese so you don't need the sound on, you can tell what she's doing by just watching.

A slight correction--it's Chinese :P Just giving nationalistic credit where it's due. Very clever indeed!

Sorry! Correction noted. The mistake traveled to me from another source. I will edit the post.

So, if you're making something that calls for a lot of separated eggs, like an angel food cake for example, can you use a vacuum cleaner? Seriously, that's pretty cool. I'll have to try it one of these days, but I find your bare hands to be the best tool for this job.

Definitely going to have to test this one out, just for fun once. On a related note, the thing that drives me nuts when I see someone separating eggs is when they do so over a bowl already containing some whites . . . you never know when a yolk will break and you certainly don't want that happening over a bowl already filled with 10 whites.
