    Does anyone know of any? I'm looking to do a story on the scarcity of women within this particular realm of the industry.

    I cannot think of any; I am sure there is a binder full of qualified women - but offhand I do not know of any actually working as local sushi chefs. 8)

    There is a female sushi chef who works at Katsu. She is the daughter of a noodle master of some sort. I can't remember the specifics of her father's specialty.

    I recall a story about this and a hullabaloo about it from my days in El Lay; it seems there is sometimes an impression in Japanese culture that women's hands are too warm to make sushi.
