    Birthday entremet - Almond joconde, basil ganache, strawberries macerated in balsamic, strawberry IMBC, swirled glaze with dark chocolate balsamic truffles rolled in powdered strawberries and white chocolate/basil plaque decoration.

    Made porchetta yesterday. After a couple of hours on the Weber rotisserie I finish it over direct heat turning it every 15-20 secs. The skin turns into something like chicharron.

    Intensement Chocolat from the Laduree Sucre cookbook. Chocolate macaron, chocolate ganache (added a little cointreau, just to break it up a LITTLE), chocolate sponge soaked with chocolate syrup, chocolate mousse, enrobed in chocolate glaze. Decor is white chocolate and chocolate truffle covered in white couverture painted with red and gold cocoa butter.

    There's a bit of chocolate in this.

    Frangipane tart. Almond frangipane, with pears poached in chardonnay, orange peel, sugar, vanilla, cinnamon, nutmeg, ginger and cloves and a few random brandied cherries tossed in for good measure.

    Tortilla Espanola from the current issue of Saveur. Made with potato chips, based on a Ferran Adria recipe.

    Not quite done when I took the photo. Put it back under the broiler for another four minutes and it was perfect.

    I have to try this tortilla! I was sceptical about the potato chips but looking at your pic makes me want some of this NOW!! Great job!

    Arandas is closed. It looks like they may move a block west to 1812 W 47th (the old Chicago Pizza and Pumping Station) but neither place is open right now. Your breakfast of eyeball tacos with a michelada chaser will have to wait.

    Got up early this morning and found some peaches I had canned last fall. They made a very tasty peach-cinnamon streusel coffee cake.
