You've hit upon my favorite way to cook. I love to be-bop my way through the fridge and create a dinner. When I was a wee lad, I would often complain to my father about how there was "nothing to eat". By "nothing", I meant nothing that I could pull out of the fridge and start eating. In response, my dad would take one look at the fridge and whip up something fantastic. I learned to cook this way by watching him.
Just last night, petit pois and I were home late from running errands and I needed to get a quick dinner together. I started cooking a sweet onion in olive oil over high heat. When it started getting brown I de-glazed with a little stock and added some garlic, frozen peas, and cubed smoked chicken from
Step 1. Finally, some salt, pepper, a handful of parsley. Served over some white rice, it was one of the best fridge meals I've thrown together in a while.
