I'm a fan of
Cook's Illustrated magazine, and just began subscribing to their new spin-off
Cook's Country. The issue I received recently had a number of recipes for grilled cheese sandwiches, including one for a "Windy City Grilled Cheese Sandwich," described thusly: "If you like a Chicago hot dog, you'll love this sandwich." The recipe:
"Use 2 cups grated Swiss cheese. Layer 1/4 cup cheese, I very thin slice red onion (with rings separated), 1 thin slice bologna, 2 teaspoons Dijon mustard, 1 tablespoon dill pickle relish, another slice bologna, 1/4 cup prepared sauerkraut (rinsed and drained), and 1/4 cup cheese into each sandwich." (Instructions for cooking are included with all the various grilled cheese varieties presented.)
I'm not sure how this would taste, though unappealing springs to mind, and I'm fairly certain it wouldn't taste at all like a Chicago hot dog. Anyone want to grill one up and see? (I will say I have used recipes from other issues of this magazine with great success.)
