    Bill,

    If it is not too much of a bother, could you list the 16 varieties. I have never see more than about nine: peppers and cheese, sweet corn, pineapple, strawberry, chicken or pork with green or red sauce (four variations there) plus those with banana leaves instead of corn husks. To save yourself time, what did you make that I never heard of?

    There are tamales from the Philippines with peanuts and all sorts of stuff wrapped in banana leaves. There was a caterer here who made them, who left the business.

    Hi, Cathy. To the best of my memory:

    Small square (2" x 2" x .5") wrapped in banana leaves (very common in the tropical regions of Mexico)
    1. Beans and cheese (my favorite!)
    2. Green chile pork
    3. Red chile chicken
    4. Mole chicken

    Finger sized wrapped in corn husk
    5. Sweet (red)
    6. Mole
    7. Rajas

    Standard size wrapped in corn husk
    8. Mole (red) with chicken (?)
    9. Mole (brown) with chicken (?)
    10. Cheese and rajas (runner-up for favorite)
    11. Green chile with meat (?)
    12. Red chile with meat (?)
    13. Sweet (red)
    14. Sweet (brown)
    15. Tomato (least favorite IMO)
    16. I don't remember - we're going to be reheating and eating these over the next few days so I'll see if I can figure this one out.

    Yvolina, the tamale lady at the Pilsen Market (Sundays, June-October) lists 23 varieties. Most are Oaxacan style, wrapped in banana leaves. She doesn't have them all at any given time but if you get there early there will be a huge selection. I actually gave you half of one of her tamales a little over a year ago. Mike Sula wrote about her a few months ago, singling out her spinach and mushroom version. I never was lucky enough to try that one but still agree she makes some of the best around. Here are a couple of her tamales—pork in a spicy red sauce and chicken in some sort of mole, both terrific.

    Unfortunately the market is closed for the season (last Sunday was the final day) but I think you could get in touch with her if you need a large order.

    A combo of roasted chicken and turkey meat along with onions, carrots & celery, black pepper, garlic and a couple of cherry tomatoes. All made into a broth

    wife is going to her book club holiday party (I get to go to a wine dinner!)
    I made mini Mama's Pecan Pies in muffin tins using the CI vodka pie crust

    Mama's Pecan Pie

    Mix:
    1 cup light brown sugar
    1/2 cup white sugar
    2 tablespoons flour

    Add:
    2 beaten eggs
    2 tablespoons milk
    1/2 cup melted butter
    1 teaspoon vanilla extract

    Place 1 cup pecan halves in an uncooked pie shell, and pour mixture over it.
    Bake about 45 minutes at 350F.

    Did some canning recently.
    Sorry about the ginormous pic, not sure how to make it smaller without loosing quality.

    33 jars of pickled goodness:

    3 Quarts of Eggs
    2 Quarts of Red Onions
    1 Quart of Asparagus
    12 Quarts of Green Beans
    15 Quarts of Spicy Veggie Mix with Red/Yellow/Green Bell Peppers, Red Onions, Garlic, Jicama, Parsnips, Carrots, and Jalapeno's.

    Are those hardboiled eggs canned? If yes, what type of solution and how was it processed?

    Yes, white vinegar (ran out of apple cider vinegar), pickling spice, Red Onions, & a few cloves.
    Heated it all up to boiling then let it cool down a bit.
    Poured the solution into the jars with the eggs, closed them up then into a pot of water simmering (not boiling) for 10 mins
