    As we approach the end of the year, I am reflecting on some things I have always wanted to make but never have. Okay maybe not enough room or thought to list 100 but here are a few of mine. Most seem to involve dough. None are very exotic. (I have never made any of these) These are a few things that come to mind. What is on your list?

    1. Croissants
    2 Brioche
    3. Potica
    4. Masala dosa
    5. Good crunchy home fried chicken
    6. Rye bread
    7. Donuts
    8. English Trifle
    9. Mozzarella cheese
    10 Strudel
    11. Nut horns
    12 Rugelach
    13 Ile Flottante ?
    14. Poire Au Belle Helene

    Great topic! Your list is excellent and I recommend the brioche and croissant recipes from Fine Cooking-- the instructions are easy to follow and the results are excellent. They certainly talked me through croissants! (http://www.finecooking.com/recipes/clas ... sants.aspx). Totally worth making yourself.

    Here's my list, in no particular order:

    1. Hard cheese (cheddar or blue)
    2. A great baguette
    3. Showroom-worthy coated chocolates
    4. Head cheese
    5. Real barbecue (pork butt)

    Maybe someday I'll have the time for all this!

    My short list:

    1. Pulled and blown sugar decorations
    2. Salami
    3. Cheddar cheese

    I had cheese on my list too but I wanted to make a simple cheese maybe like fresh mozzarella.

    1. Some sort of dry-cured meat (salami, coppa, etc.). I've done bacon, and stuffed my first sausage casings last week (for a fresh, cooked sausage), but haven't gotten to this yet
    2. Bagels. We may have made them in the house once, I'm not sure
    3. Pastrami. After having SteveZ's and ronniesuburban's version, I want to give it a try
    4. Hard cheese is mentioned above, but that's something I haven't tried either (we've done mozz, ricotta and paneer)
    5. Soft bloomy cheese would be fun too (I have a fantasy of retiring to make artisinal goat cheeses)
    6. A complex dish from the Alinea cookbook (I've done individual preps, and one of the easy recipes: bacon, apple, butterscotch)

    Gnocchi. I've attempted it many times, and have yet to succeed in producing anything acceptable.
