I've gotta give a huge tip of the beret to deesher, who recommended this gem of a spot to me before our trip to Paris last fall
(I'm finally getting around to posting reports from this trip) . . .
L'Ecailler du Bistrot - 22 Rue Paul Bert, Paris
Menu BoardThis menu board, which is about 1 meter tall, gets moved around the restaurant and placed on tables as patrons are seated. There were some good-looking treats here but it wasn't our main focus.
Raw MenuThis menu is why were were here.
2011 Catherine et Pierre Breton Vouvray La Dilettante Sec, Loire, FranceCrisp and clean -- a great accompaniment for what was coming next.
Selection of Raw ItemsOn deesher's outstanding recommendation, we ordered quite a few Utah Beach oysters and a bunch of other ones, too. We also had some whelks and some small shrimps that I believe were salt-cured. These oysters, especially the Utah Beach oysters, were some of the finest I've ever enjoyed and they were one of the major eating highlights of this trip (which also included meals at 3 Michelin 3-Star restaurants).
Fried ShrimpOk, Man does not live by raw alone!

FritesThese looked so good going out to the tables near us, we had to have an order of our own.
Raw PrepAt a place that does this kind of volume, this is a Sisyphean task to be sure but this gentleman did his job with remarkable expertise. Every single oyster still contained its delectable liquor and I don't remember encountering even a single tiny bit of shell in any of them.
