    I'm making a quiche for dinner next week to get rid of excess broccoli (it also has cheese and 'shrooms). Any suggestions for a good low-carb side dish? Preferably vegetarian. Thanks!

    I had Apple-manchego-and-chive-salad on my vacation. Really simple and delicious. Feel I could eat it everyday. I'd definitely use Granny Smith apples. Since your quiche will have cheese you may want to look into another salad without cheese--tabouleh, quinoa or cous cous something or other if you want healthier carbs. If not, I like a black bean, red pepper and red onion type salad.

    Tossed salad? Seems hard to go wrong with that, but I like a tossed salad. :)

    What about hummus and some chips?

    My immediate thought was salad. I figure blood oranges (aren't they in season?) and arugula with, maybe a raspberry vinaigrette. We used to do a blood orange, honey and hot red pepper appetizer that you could maybe adapt.

    Salad is the thing I think of with quiche. Be creative with greens, nuts and maybe add some fruit or cheese to it.
    The other thing I think would be good would be a broccoli salad, the one that is usually made with a mayo based dressing, red onions, raisins and sunflower seeds. I like to put bacon in but would not be vegetarian then.

    Kale crushed by hand with some kosher salt, lemon juice, olive oil, red pepper flakes, and a couple cloves of crushed garlic, tossed with toasted pine nuts, dried cranberries, and maybe a bit of grated parmesan or pecorino, has been my favorite go-to salad this winter.

    Fresh fruit salads are nice with quiche, too.
