    Podhalanka, move over. Enjoying a busman's holiday with a two day weekend, after working 2 weeks straight through. We went to Fresh farms yesterday and picked up farmers cheese as well as strawberries. I made the crepes and The Lovely Donna made the filling and rolled the blintzes. Pan fried them nice and crisp in Plugra butter.

    Oh my, that looks wonderful! And you've just reminded me that we have a batch of gluten-free crepes in the freezer that need to be used up.... hmmm...

    Oh, yum. I thought about making blintzes for Shavuos, but I didn't have the ingredients on hand and made a tuna and cheese casserole instead. It was good, in a nostalgic sort of way -- my grandmother's recipe, one of the first I asked her for when I started cooking for myself in college -- but no match for blintzes.

    Looks great! I love blintzes but for some reason rarely make them myself, so your post reminds me to do so. I can highly recommend the blintzes at GNR Smak Tak, by the way. I order them too rarely because I always fill up on their great soups and entrees. Not that they have to be eaten only at breakfast or for dessert....

    We like to make several dozen blintzes at a time and freeze between layers of wax paper. Makes for a very quick and tasty weekend breakfast. Run them through the microwave, frozen for about 15 seconds, and the cheese is thawed out. Then it's only minutes to pan fry and enjoy.
