Went today for lunch at Elio Pizza on Fire in the town of Addison, I was first one in at 11am, got a few minutes to talk with Elio the owner. Elio is from the Palermo area of Sicily. Elio Pizza on Fire uses oak or hickory wood in their oven (which at 11am had some nice coals going in it).
I had the Margherita pizza, nice chewy crust with some blistering (I think Neapolitan experts would want more char/blistering), good cheese, chopped basil and a decent sauce (my only negative is I wish the sauce was more bright/present).
I hope to be back soon to try out some of their other pizzas, nice to have a Neapolitan pizza in the area.
