I have a Kyocera 5 1/2" santoku and 3" parer that I'm happy with so far.
To be honest, a Kyocera is so far better than a knockoff.
I bought two of the cheap knives from HF. My opinion is that when doing a straight cut it is decent. If ANY stress is applied it breaks.
Kyocera has a very good documentary done on the ceramic knives, I wish I could provide a link. Quality vs. a son who stole the company from his father (HF). To be honest, I do buy many tools from HF, I just do not like what the son did. Neither do the two check out clerks that I deal with locally.
