    I was going to buy a lobe of the frozen sweetbreads at Treasure Island yesterday, but thought I'd ask the board for some locations where I could buy fresh veal sweetbreads... any experiences here?

    Also, has anyone actually used the frozen sweetbreads from TI? Assuming it wouldn't be a bad option... just defrost before soaking.

    I've gotten fresh lamb sweetbreads at Marketplace on Oakton. IIRC, they were pretty reasonably priced, too ... $1.99 lb.

    I've cooked with sweebreads many times and have usually purchased them frozen. Never found fresh veal sweetbreads. I don't believe they suffer any quality. I don't think I've purchased them from TI but I would imagine there's not much difference in quality between a TI sweetbread and a Paulina Market one. It's not like they're graded prime, choice, etc. My opinion is they will be just fine.

    Lamb sweetbreads were available yesterday at Sahar Meat Market II (link); I’m reasonably confident that they would be happy to provide you with fresh veal sweetbreads too, since they also sell veal products, including the 'variety cuts'. Give them a call or stop by if you're in the area.

    I suspect City Noor in the same neighbourhood (see link) could also set you up in this regard; they typically have carried a lot of veal.
